Cherry and Chocolate Layer Cake


You will need:
Pitted cherries
2tbsp of honey or golden syrup
115g of margarine
115g of caster sugar
115g of self-raising flour
30g of cocoa powder
1tsp of vanilla extract
2 eggs

Preheat the oven to 200C. In a large bowl, cream together the butter and the caster sugar. Then beat in the eggs, vanilla extract and flour, ensuring plenty of air is folded into the mixture.

Separate the cake mixture into two bowls. In one bowl, beat in the cocoa powder until thoroughly combined.

Place the cherries into the bottom of a deep cake tin. Spoon the honey over the cherries, so that they are evenly coated. Gently pour the chocolate cake mix over the cherries, and spread evenly to cover them entirely. Then pour the vanilla cake mix on top of this, and spread out evenly.

Bake for 30-35mins or until a skewer comes out clean. Then simply, leave to cool and turn out of the tin! When you slice the cake, you will get a layer of cherries, a chocolate layer and a vanilla layer!
