You will need:
200g of self raising flour
100g of butter (cubed)
75g of caster sugar
50g of cranberries
50g of pumpkin seeds
The zest of 1 lemon
1 egg
Preheat the oven to 200C and prepare a baking tray by lining it with greaseproof paper.
Sieve the flour into a large mixing bowl, add the cubed butter. Using the tips of your fingers, rub the butter into the flour until the mixture forms a breadcrumb structure.
Stir in the sugar, cranberries and pumpkin seeds. Add the zest of one lemon and stir thoroughly.
In a small bowl, beat one egg and add to the cake mixture. Use a wooden spoon to stir in the egg until the mixture forms a loose, crumbly texture.
Place the mixture into 6-8 heaps onto the baking tray. Place in the oven and bake for 10-15mins, until golden brown.
