Carrot and cardamon chutney

Serving suggestion: Serve on a cheese board with strong cheeses
You will need:-
4 large carrots
2 tablespoons of fresh ginger
3 cloves of garlic
128g of brown sugar
125ml of malt vinegar
50ml of balsamic vinegar
1/2 a teaspoon of cardamon

Finely grate 4 large carrots, 2 tablespoons of fresh ginger and crush 3 garlic cloves, add these to a saucepan and fill with just enough water to meet the top of the carrots. Bring this to the boil and then allow to simmer for 45mins.

When the carrots are boiled add 128g of brown sugar, 125ml of malt vinegar, 50ml of balsamic vinegar (or alternatively, you could use 175ml of cider vinegar) and 1/2 a teaspoon of cardamon. Leave this to boil for another 45mins.

(Tip: if you would like it to have a bit of a kick, you could always add some dried chili pepper)
