You will need:-
75g of butter
75g of self-raising flour
1/4 tsp of baking powder
75g of caster sugar
2 eggs
25g of cocoa powder
1/2 a teaspoon of ground cardamon (or 12 cardamon pods)
6 small pears
2 tsp of golden syrup
Preheat the oven to 180C and lightly grease a large pudding bowl or cake tin with butter. Then in a mixing bowl, cream 75g of butter and 75g of caster sugar together, then sift 75g flour and baking powder into the bowl, also adding the eggs. Mix this until completely combined, beating plenty of air into the mixture. Then add 25g of cocoa powder and the cardamon to the mixture and beat the mixture again until the cocoa is evenly distributed throughout.
Pour the mixture into the grease bowl and press the pears into the mixture.
Bake for around 25 minutes, or until a knife can be pressed into the cake and comes out clean. When the cake has cooled, drizzle over the golden syrup for decoration.
Tip: This recipe also works to make individual puddings, instead use ramekins and cut off the bottom third of the pear. Bake for about 15mins.
Enjoy! x
