Spiced Peanut Butter Cookies

A really simple yet tasty recipe
You will need:-
45g smooth peanut butter
50g of butter
50g of light brown sugar
50g of caster sugar
1 egg
100g of plain flour
10g of baking powder
1tsp of cinnamon
1/2tsp of ginger

Preheat the oven at 180C, in a bowl mix together the peanut butter, butter (that has been softened), caster sugar and light brown sugar. Then add the egg and combine this into a thick paste, then add the flour, ginger and cinnamon. Beat this together thoroughly.

Divide this into little balls and place on a baking sheet, ensuring plenty of space between the, for when the spread in the oven. Press them with a fork to help them take shape. Bake for 20-25mins and cool on a wire rack.

Tip: If you would like to add a texture to the cookies, use 25g of smooth peanut butter and 20g of crunchy peanut butter instead.
