Almond and Coconut Brownies (Gluten Free)


You will need:
75g of coconut oil
250g of dark chocolate (at least 70%)
15g of cocoa powder
250g of caster sugar
4 eggs
100g of ground almonds
A couple handfuls of flaked almonds

Preheat the oven to 180C and lightly grease a tin and line with baking paper. Over a low heat, melt the coconut oil and chocolate in a pan. Once completely melted, whisk the cocoa powder and sugar until completely combined.

 The whisk in the eggs, each one at a time, then fold in the ground almonds and a handful of flaked almonds. Transfer the batter into the prepared tin, sprinkle more flaked almonds over the top of the batter and bake for 25-35mins, or until a knife comes out clean.

Leave to cool completely in the tin and then slice evenly.
