Microwave Chocolate Pudding (Dairy Free)


You will need:

For the sponge:
60g of olive oil
225g of self-raising flour
200g caster sugar
50g of cocoa powder
100ml of almond/coconut milk

For the sauce:
150ml of soft brown sugar
50g of cocoa powder
400ml of boiling hot water

Sieve the self-raising flour, caster sugar and cocoa powder into a large pyrex bowl. Add the olive oil and dairy free milk. Beat with a wooden spoon until smooth.

In a small bowl, stir together the cocoa powder and brown sugar. Sprinkle this over the top of the sponge mix. Pour over the boiling hot water.

Cook in the Microwave on high, for 12 minutes.

Leave to stand for a couple minutes before serving.
