Key Lime Drizzle Cake



You will need:
225g of butter
225g of caster sugar
225g of self raising flour
4 eggs
2 limes
2 Firm Kiwis

Firstly, preheat the oven to 180C and line a loaf tin with greaseproof paper. Then, cream together the butter and caster sugar in a large bowl. Add the zest of two limes and the juice of half a lime, beat this until fully combined. Roughly beat the eggs into the mixture. Then mix in the flour, ensuring plenty of air is folded into the batter. Pour the cake mix into the loaf tin and bake for 45-50mins, or until a cocktail stick comes out clean.

Whilst the cake is baking, you can make the drizzle. De-skin two kiwis and grate these into a small bowl. Add the juice of half a lime and 4 tablespoons of caster sugar. Beat this until the sugar fully dissolves. When you take the cake out of the oven, pierce the top with a cocktail stick and pour over the kiwi lime drizzle and let this soak in.

Once cool, remove from the tin and serve.
