Welsh Cakes


You will need:
225g of self-raising flour
100g margarine
50g of caster sugar
50g of currents
1 egg
2tbsp of milk

Firstly, put the flour and butter into  a large bowl. Then, use the tips of your fingers to rub the butter and flour together until it forms a fine crumb structure. Stir in the caster sugar and currents using a wooden spoon.

Add the eggs and the milk to the flour mix, and combine this into a stiff dough. You may need to add a touch of flour if you feel the dough is too wet.

Roll out the dough on a floured surface, you need the dough to be a thickness of 5mm. Use a cutter to cut out the welsh cakes.

Cook these using a heavy pan or griddle-pan that is on a medium heat. You will need to cook these roughly 3 minutes each side, depending on the heat.

You can serve these with either butter or sugar, hot or cold!
