Earl Grey cupcakes

Earl grey cupcakes
You will need:-
150ml of milk
loose leaf earl grey tea
115g of butter
115g of sugar
115g of self-raising flour
2 eggs

The earl grey flavour in these cakes gives a nice twist to the classical sponge cake, an interesting alternative in an afternoon tea.

First, put 150ml of milk into a milk pan and add a heaped teaspoon of loose leaf earl grey tea. Gently warm this for about 10-15mins to brew the tea, then leave to stand (preferably overnight).


In a large bowl, cream together 115g of butter and 115g of sugar. Then, add 115g of sieved self-raising flour, 2 eggs and the earl grey infused milk. Beat this mixture thoroughly, folding in as much air as possible. 


The mixture can then be spooned into  a lightly greased cake tin, paper cupcake cases, or I used silicon cupcake cases which resemble tea cups!

(Tip: Earl grey tea and lemon go very well, so if you fancy icing the cupcakes, mix 140g of softened butter, 280g of icing sugar and the rind of a lemon to make a lemon butter icing)
