Apricot, lemon and honey cupcakes

Apricot, lemon and honey cupcakes
What you will need:-
115g of butter
115g of sugar
115g of flour
2 eggs
1 lemon
4 apricots
honey

Preheat the oven to 180 degrees Celsius. In a large bowl, cream together 115g of butter and 115g of sugar. Then, add 115g of sieved self-raising flour and 2 eggs. Add the zest and juice of a lemon. Beat this mixture thoroughly, folding in as much air as possible. Spoon the mixture into cake cases. Place in the over for 15-20mins, just until they have started to form a crust on the top. 

Whilst the cakes are baking, slice the apricots into to crescent shapes.

When the cakes are almost ready, take them out of the oven and quickly arrange the apricot pieces ontop and drizzle with honey (you can also lightly sprinkle some caster sugar on top too). Then place back in the oven until the cakes look fully baked.

The heat combined with the honey should caramelize the apricots slightly, so you get a nice sweet burst of flavour to compliment the lemon in the sponge.
