Spun sugar is an interesting way to decorate cakes! |
You will need:-
250g of sugar
225ml of water
First, pour the 250g of sugar and the 225ml of water into a sturdy sauce pan and stir until the sugar has dissolved, do not stir again after this point. Then, let the water boil off until the mixture turns a pale brown colour, then remove off of the heat.
Warning: be very careful, the sugar is incredibly hot and will cause severe burns if touched.

Once you have removed the sugar off the heat, use a spoon or fork to light drizzle the sugar into the pan. When you see small fibres of sugar coming of the end of the spoon, the sugar is ready.
Take a small bit of the molten sugar on a spoon and flick it over the top of a wooden rolling pin (very quickly). This will created long fibres of sugar which you can gather up to create a mesh. (Again, be careful with the sugar, I would suggest doing this without any little ones around).
I did this over and over again and gathered up the fibres into a tightly compact nest. This made the perfect topping for an easter cake!
