Low Fat Chai Tea Loaf



Ingredients:
4 chai tea teabags
300ml of boiling water
500g of raisins
125g of sugar
250g of self raising flour
1/2tsp of mixed spice
1 egg

1) Brew the tea bags in boiling water for ten minutes, then remove the tea bags and transfer the tea into a large bowl and coat the raisins in the tea. Leave this to rest for at least 2 hours.

2) Preheat the oven to 180C. Line a loaf tin with greaseproof paper.

3) Beat together the dry ingredients and egg. Add the soaked fruit and tea, mix until well combined. Bake for 45 minutes until firm to the touch. Allow to cool before serving.
